Wash and dry all produce. Drain and rinse @rice noodles{7%oz}. Halve, peel, and very thinly slice @onion{1%unit}. Halve, peel, and thinly slice @carrot{2%units}. Core, deseed, and thinly slice @bell pepper{1%unit}. Halve, peel, and thinly slice @pork tenderloin{10%oz}. Halve, peel, and finely chop @garlic cloves{4%cloves}. Finely chop @fresh ginger{1%tbsp}. Quarter @lime{1%unit}.

In a #large skillet{}, heat @vegetable oil{1%tbsp} over medium-high heat. Add pork, @salt{1%tsp}, and @black pepper{1%tsp}. Cook, stirring, until browned and cooked through ~{5%minutes}. Transfer to a #medium bowl{}.

In the same skillet, heat remaining oil. Add onion, carrot, and bell pepper. Cook, stirring, until tender-crisp ~{4%minutes}. Add garlic, ginger, @hoisin sauce{3%tbsp}, @soy sauce{2%tbsp}, and @rice vinegar{1%tbsp}. Cook, stirring, until sauce thickens slightly ~{1%minute}.

Meanwhile, drain noodles and toss with @sesame oil{1%tsp}. Add noodles and pork back to skillet. Toss everything together until noodles are well coated and heated through ~{2%minutes}.

Divide noodles between plates. Top with a squeeze of lime juice and @sesame seeds{1%tsp}. Serve immediately.
